After consulting with the Chef & Owner, we made some adjustments to the beer list, offering more craft brands and fixing distributor issues and some storage problems.  The wine list was changed to be more simple and cost effective, making it easier for guests to order without assistance, increasing sales and speed of service while lowering Cost of Goods Sold to 18%.  Added a short cocktail list utilizing wine-based spirits in simple recipes, which increased sales during lunch and brunch service.

Increased diversity of the wine list by including more American and European wines to appeal to the diverse customer base.  Trained staff and managers on how to quickly guide guests to more expensive options, increasing sales and service efficiency.  Negotiated programming with distributor partners to maximize support.  Solved storage issues and facilitated inventory management including weekly ordering.  Lowered Cost of Goods Sold from 32% to 19%.

After consulting with bar teams and executive management we did a complete overhaul of the beverage programs.  Increased wine list to 400 bins earning a Wine Spectator Award.  Streamlined ordering by creating processes to improve weekly ordering, significantly lowering costs.  Set up advanced training for bartenders to increase their cocktail creation skills and increased their investment in their abilities and cocktail programs.  Removed unnecessary software subscriptions and created documents to automate ordering and inventory processes.  Negotiated programming with vendors to maximize support which enabled the venue to conduct more successful off-season events.  Lowered Cost of Goods Sold from 28% to 22%, saving the business $120,000 per year while increasing sales as well as improving overall quality of the guest experience.
